SAVOURY PIE WITH TROPEA ONIONS

Ingredients

  • 180 g of rice flour
  • 50g of cornstarch
  • 20g of corn stock
  • 100 g butter
  • 100 ml of ice-cold water
  • 2 potatoes
  • 1 sprig of rosemary
  • 1 tablespoon of 30-month Parmigiano Reggiano DOP
  • 3 Tropea onions
  • 1/2 tablespoon whole cane sugar
  • 1 tablespoon balsamic vinegar
  • Extra virgin olive oil
  • Whole sea salt

Preparation

  • Mix the flours with the salt and quickly incorporate the butter cold cubes, obtaining a crumbly mixture.
  • Add the water and mix quickly; wrap the dough in cling film and let it rest in the refrigerator for 30 minutes.

There are several ways to enjoy them in the kitchen, but the most interesting, and also the simplest, is onion pie (the best quality is undoubtedly that from Tropea, in Calabria). With this recipe, you can easily make it in half an hour and you'll even have leftover bread. Plus, if you refrigerate it, onion pie can be eaten for up to two days after making it.

Ingredients

  • onions 500 g
  • 100 g dry breadcrumbs
  • butter 30 g
  • 4 slices of integrated black bread
  • 60 g bacon in four slices

Preparation
