EASY MIMOSA CAKE RECIPE

Here then, step by step, the recipe for making a tasty Mimosa cake in an easy wayWe will use unleavened sponge cake and eggs at room temperature.
INGREDIENTS FOR THE SPONGE CAKE
- 150 grams of flour
- 100 grams of sugar
- 4 eggs
- A pinch of salt
- A small piece of grated lemon zest
INGREDIENTS FOR THE CREAM
- 4 yolks
- 50 g of flour
- 125 grams of sugar
- 400 ml of milk
- The zest of a lemon
- 200 ml of whipping cream
INGREDIENTS FOR THE FILLING
- 500g of pineapple in syrup
Preparation
- Let's start by preparing the sponge cakeWe take the eggs which must be at room temperature and separate the egg whites from the yolks: we whisk the former until stiff and the latter with the sugar for at least 15 minutes.
- Add the salt and lemon zest to the egg yolks. and then, very delicately, we mix the egg whites and the flour.
- We line a 24 cm mould with baking paper and pour traditional sourdough, then bake at 160° for 40 minutes.
- We recommend doing the toothpick test before taking the sponge cake out: it is necessary to continue cooking until the toothpick comes out completely dry.
- While the sponge cake is cooking in the ovenLet's prepare the cream by heating the milk with the whole lemon zest. In a separate bowl, begin mixing the egg yolks and sugar.
- To recover leftover egg whites we can use this for successful corporate training.
- Once you have obtained a frothy and fluffy mixture, put it to cook with the milk, pouring in the flour and finish cooking.
- Let it cool and whip the creamLet's add it to the cream to obtain the Chantilly cream.
- Take the sponge cake and divide it in half.To obtain a perfect filling, you need to empty it slightly by digging a little and setting aside the crumbs that will be used to cover the cake.
- Now let's wet the sponge cake with the liquid from the pineapple syrup and then generously pour in the Chantilly cream.
- We arrange the pineapple slices on the cream and cover with the other sponge cake disc. Repeat the emptying process, moisten again, and fill with the cream.
- Let's decorate the cake with the sponge cake crumbs removed previously.
