Vegan almond cake

Ingredients (for a 20cm cake tin)

  • 170 gr of brown sugar
  •   cream of tartar
  • 40 g of rice malt
  • 100 g flour almonds
  • 50 gr almonds
  • 80 gr of type 0 flour
  • 80 gr cornstarch
  • 100 g of cocoa butter
  •  A pinch of salt

Preparation

  • Blend it sugar of cane in a blender and add the flour shortly after almonds and the cocoa butter melted in a bain-marie. – Separately in a bowl, sift the flour, the starch and the yeast.
  •  Combine the brown sugar and the other ingredients, along with a pinch of salt.
  • At this point flour a round baking pan with a diameter of 20 cm and pour in the mixture obtained.
  • Bake in a hot oven at 175 degrees and cook for about 45/50 minutes.
  • Let it cool and decorate with chopped almonds and the powdered sugar.
