How to make Caprese cake
La cake Caprese (mozzarella cheese, tomato, basil) it is a real delicacy based on cocoa e almonds of Neapolitan origin, specifically from the island of Capri, simple and quick to prepare.

Ingredients
- 300 g butter
- 250 grams of powdered sugar
- 240g of eggs approximately 5
- 40 g of egg yolks
- 60 g of egg whites
- 100 grams of cocoa powder
- 450 gr of almond flour
- 30 g of sliced almonds
- 75 grams of sugar
Preparation
- Using an electric mixer, whip 280g of butter with 220g of powdered sugar. Beat the eggs together with the yolks and slowly pour them into the whipped butter.
- Using a spatula, incorporate the bitter cocoa, almond flour, and sugar into the mixture, mixing well from top to bottom so as not to deflate it. Finally, add the whites whipped into meringues.
- Arrange the sliced almonds on the bottom of a previously buttered cake pan and fill it with the mixture up to three-quarters full.
- Bake the cake in the oven at 180 degrees for about 25 minutes and when ready to serve, sprinkle with icing sugar.
