APPLE RISOTTO RECIPE

With a delicate flavour and perfect for the lunch at the office, apple risotto It was one of painter Giorgio Morandi's favorite dishes. It was also the perfect way to avoid wasting ripe apples.

APPLE RISOTTO

A simple and quick first course to prepare, enriched by turmeric and white wine. Let's see how to proceed together:

Ingredients

  • 320 grams of risotto rice (Carnaroli, Superfino Arborio, or Vialone Nano)
  • 2 Rennet or Granny Smith apples
  • 1 heaped teaspoon of curry
  • 1 heaped teaspoon of turmeric
  • 1 small onion
  • About ½ litre of vegetable broth (you can also prepare it with well-cleaned vegetable scraps)
  • ½ glass of sparkling white wine
  • 2 butter nuts

Preparation time: 20 minutes

Cooking time: 20 - 25 minutes

Preparation

  • Prepare or heat the broth, and dissolve the turmeric and curry in it.
  • Chop finely chop the onion.
  • To melt il butter in a saucepan and brown the onion slowly, over low heat, adding a little water so it doesn't burn.
  • Add the rice and toast it for a few minutes, until the grains become shiny.
  • To pour the wine and, when this has evaporated, enough broth to cover the rice well.
  • Let it cook Stir occasionally and add more broth as needed. As with all risottos, be careful not to let it dry out too much or stick.
  • In the meantime, cut and peel an apple and a half, and chop them.
