RISOTTO RECIPE WITH DRIED TOMATOES –
In the kitchen, to prepare truly original dishes with a surprising taste, you don't need to use special ingredients: just combine together, for example, three delicacies such as dry tomatoes, rocket pesto and olive to make a truly special risotto in a short time.

RISOTTO WITH DRIED TOMATOES, ARUGULA AND OLIVES –
A colourful and very tasty first course, which involves the use of black rice, a whole grain variety originally from China, with large, black grains and an aroma so intense it's reminiscent of freshly baked bread.

BLACK RICE RECIPE WITH DRIED TOMATOES, OLIVES, AND Arugula PESTO –
Let's see together, through the suggestions of chef Simone Salvini, How to prepare black rice with dried tomatoes, olives, and arugula pesto:
Ingredients
- 400g of whole grain black rice
- 100 g of dried tomatoes
- 100g of Bella di Cerignola green olives
- 200g of aromatic herbs (mint, basil, rocket)
- 200 ml of extra virgin olive oil
- 100 gr of peeled almonds
- Extra virgin olive oil (for decoration) to taste
- 1 whole dried chili pepper
- Lemon zest to taste
Preparation
- Cook the black rice in plenty of salted water for about 42 minutes.
- Meanwhile, chop the sun-dried tomatoes and olives and add them to the rice once it's ready.
- Finely chop the peel Lemon; and season the rice with the zest and a few drops of spicy oil.
- Blanch the herbs in salted water for one minute, drain them, and then cool them in iced water.
- Remove the aromatic herbs from the water and blend them together with the oil and the almonds until the mixture becomes smooth. Season with salt and refrigerate.
- Serve the black rice with a quenelle of herb pesto.
