CHAMPAGNE RISOTTO RECIPE
Do you have a leftover bottle of champagne or good prosecco? Use it to make a delicious risotto. A truly special dish, perfect for the holiday table.
Ingredients for 4 people
- 320 grams of risotto rice
- ½ bottle of champagne
- 1 shallot
- 40 grams of butter
- 4 tablespoons of extra virgin olive oil
- Light vegetable broth
- Grated Parmesan cheese
Preparation
- Clean the shallot and chop it up finely.
- Heat the oil in a pan suitable for risotto, combined the shallot and do it brown over a very low heat, so that it doesn't brown.
- Wet with a third of the champagne, and let it evaporate.
- United the rice, mix thoroughly, then paid the remaining champagne (or prosecco).
- Fate evaporate the wine, finally cook the risotto with the necessary vegetable broth.
- Turn off the fire, move away the risotto from the heat, creamed with butter and a couple of tablespoons of grated Parmigiano Reggiano.
