How to prepare risotto with persimmons

Ingredients

(For 2 people)

  • 150g parboiled rice
  • The pulp of 2 medium persimmons
  • 1 liter of salted water
  • A pinch of chili pepper
  • 1 tablespoon of mascarpone
  • Chilli powder

Preparation

  • Bring a litre of lightly salted water to the boil, and meanwhile melt a knob of butter in a non-stick pan.
  • Add the rice and toast for a few minutes, add the boiling salted water and continue cooking. Stir occasionally and add a pinch of Chili pepper in powder.
  • Meanwhile, peel the persimmons and chop the pulp. Gradually add the persimmon pulp to the rice and continue stirring until well combined.
  • Continue stirring until cooked, turn off the heat and add the spoonful of mascarpone Mix and serve.
