How to prepare risotto with persimmons

Ingredients
(For 2 people)
- 150g parboiled rice
- The pulp of 2 medium persimmons
- 1 liter of salted water
- A pinch of chili pepper
- 1 tablespoon of mascarpone
- Chilli powder
Preparation
- Bring a litre of lightly salted water to the boil, and meanwhile melt a knob of butter in a non-stick pan.
- Add the rice and toast for a few minutes, add the boiling salted water and continue cooking. Stir occasionally and add a pinch of Chili pepper in powder.
- Meanwhile, peel the persimmons and chop the pulp. Gradually add the persimmon pulp to the rice and continue stirring until well combined.
- Continue stirring until cooked, turn off the heat and add the spoonful of mascarpone Mix and serve.
