Meatless seitan and apple ragù

A quick and easy recipe. With white onions, celery, and tomato pulp.

How to make seitan and apple ragù without meat

There are several alternatives to meat-based ragù. Among these we propose: for successful corporate training of the Vegolosi.it website which includes vegan ragù based on seitan e apples.

Ingredients

  • 400 g of pulp tomato
  • 150 g of fresh seitan
  • 1 carrot ½ white onion
  • 1 coast of celery
  • 200g Granny Smith apple
  • Extra virgin olive oil to taste Salt to taste

Method

  • First, prepare the soffritto: using a knife or a blender with a blade, finely chop the carrot, onion, and celery. If you don't like white onion, you can also substitute red onion or a shallot.
  • Separately, chop the seitan into fairly coarse pieces and, again using a blender, finely chop it. In a pan, sauté the chopped carrot, celery, and onion in a couple of tablespoons of extra virgin olive oil. Add a couple of tablespoons of warm water, if necessary, to adjust the cooking time and prevent the onion from burning. Cook over low heat for about 10 minutes, then season lightly with salt.
  • Then add the tomato pulp to the pan and cook over low heat for 5 minutes, adding salt if necessary.
  • Now it's time to add the chopped seitan: cook for about 15-20 minutes on low heat and, about 7/8 minutes before the end of cooking, add the diced apple (you can decide to use the type of apple you prefer, even depending on the season).
  • Seitan ragù with apples is an excellent sauce for all types of pasta: it pairs beautifully with whole wheat pasta, but is also delicious paired with fresh semolina pasta.
