OVEN-BAKED QUINOA RECIPE
La Quinoa it's a food low calorie, a pseudocereal rich in proteins, carbohydrates and dietary fiber. It is also low in fat and totally gluten-free, a characteristic that makes it perfectly suitable for inclusion in the diet of celiac subjects.
Combined with foods such as spinach (friends of the eyes and heart), pepperoni (very rich in vitamin B) and avocado (fruit full of proteins but low in carbohydrates) becomes truly a a panacea for health.

Ingredients
FOR THE QUINOA
- 2 1/2 cups vegetable broth
- 2 teaspoons of salt
- 2 cups quinoa
FOR THE VEGETABLES
- 2 yellow peppers
- 1 red pepper
- 1 new courgette
- 1 bunch of spinach
- 1 avocado
- 1 red onion
- Lime juice
- Extra virgin olive oil
- Salt and pepper

Baked Quinoa with Vegetables Recipe
Preparation
- Cook the quinoa in the brothSeason with salt. Drain if necessary and let cool, fluffing it with a fork.
- Preheat the oven to 250°CGrease a baking dish with oil and add the peppers and zucchini, cut into strips. Lightly oil and bake until golden brown. Season with salt and pepper.
- In a dish, mix the quinoa with the onion cut into small pieces, season with oil, salt, pepper, a good squeeze of lime and, finally, add the vegetables with their cooking juices.
- Mix and serve adding the baby spinach and chopped avocado.
This recipe can be served both warm and cold. Excellent dish to prepare in advance and also bring to the work.
