Ingredients

  • 100 gr of spinach

  • 1 slice of bread soaked in rice milk
  • Rice milk to taste

Preparation

  • Wash the spinach and steam it for 15 minutes. Boil the quinoa for 10 minutes in plenty of salted water, while you wash and boil the potatoes. Soak a slice of bread in milk.
  • In a bowl, combine the cooked quinoa, drained of its liquid, spinach, potatoes, well-drained breadcrumbs, salt, and pepper. If the mixture is too soft, add the breadcrumbs; if it's too firm, add the rice milk.
  • Shape the meatballs, coat them in breadcrumbs, and then fry them in a non-stick pan with a drizzle of oil.
