QUINOA AND SPINACH MEATBALLS RECIPE

Vegan Quinoa and Spinach Meatballs Recipe
The recipe for quinoa and spinach meatballs It can also be made by cooking in the oven at 180° for about 20 minutes. By frying them, however, these meatballs will take on a richer flavor: crunchy on the outside and soft and delicate on the inside.
Ingredients
- 100 gr Quinoa
- 100 gr of spinach
- 2 medium-sized potatoes
- Salt and Pepper To Taste
- 1 slice of bread soaked in rice milk
- Rice milk to taste
- Bread crumbs
Preparation
- Wash the spinach and steam it for 15 minutes. Boil the quinoa for 10 minutes in plenty of salted water, while you wash and boil the potatoes. Soak a slice of bread in milk.
- In a bowl, combine the cooked quinoa, drained of its liquid, spinach, potatoes, well-drained breadcrumbs, salt, and pepper. If the mixture is too soft, add the breadcrumbs; if it's too firm, add the rice milk.
- Shape the meatballs, coat them in breadcrumbs, and then fry them in a non-stick pan with a drizzle of oil.
