How to make stuffed peppers with breadcrumbs
In recipes from southern Italy, a region particularly rich in both variety and quality of produce, stale bread is often used . Gastronomic tradition has never lost sight of the importance of "wasting nothing," and with a little imagination, even leftover bread can become the centerpiece of dishes, a rich ingredient capable of transforming the final result.
An example of this are peppers with breadcrumbs , where the latter acts as a binder for the cooking juices, transforming them into a delicious sauce.
Ingredients for 4 people)
- 3/4 peppers, possibly of different colors
- 4/5 tablespoons of extra virgin olive oil
- 1 clove of garlic
- 3 anchovy fillets in oil
- 1 heaped tablespoon of capers
- 2 or 3 pinches of oregano
- 1 handful of grated breadcrumbs
- salt
Preparation
- Wash cut the peppers into two or three pieces lengthwise, remove the stalk, the white filaments and, where possible, the seeds.
- Cut the cleaned peppers strips a finger wide.
- Heat the oil in a heavy-bottomed pan, or non-stick, just brown the slice ofgarlic, combined the anchovy fillets and wait for them to melt.
- Add the peppers, salt them moderately, then cook them over low heat, stirring often. The peppers must soften without getting burned.
- While they cook, check that the cooking juices remain abundant, made up of oil and the moisture released by the peppers themselves.
- Once cooked, without turning off the heat, complete with the capers, theOrigan, and finally with grated breadcrumbs.
- Stirred very well, until the bread has formed a soft cream that will "bind" the pepper strips
- Turn off the fire, remove the garlic and, if necessary, adjust the salt.
The peppers with breadcrumbs are ready, full of flavor and color: an excellent side dish capable of livening up a simple second course.
If you have any leftovers , blend the peppers with the breadcrumbs and use them as a pasta sauce, even cold. If you don't have much, simply add a little tomato sauce.
