How to prepare pasta with anchovy fillets
Pasta with anchovies can be prepared in many ways. Among these, one of the most surprising, for the uniqueness and quality of the results, is to use the fillets of anchovies combined with pine nuts and apples. According to this old recipe.

- 320 grams of short egg pasta
- 2 Rennet or Stark apples
- 10 anchovy fillets (approximately) in oil
- A handful of pine nuts
- 5 tablespoons of good extra virgin olive oil
- Grated lemon zest (untreated)
- Very little oregano
Preparation
- Put the water on to heat for the pasta.
- Wash the apples thoroughly, cut them into quarters, remove the core and cook them in the microwave for 4/5 minutes.
- Pour the oil and anchovy fillets into a large pan that can also hold the pasta, heat over a very low heat and, stirring, dissolve the fish fillets.
- When the fillets are almost melted, add the pine nuts, so that they caramelize slightly, without burning.
- Blend the pulp of the cooked apples and add it to the other ingredients.
- Meanwhile, cook the pasta, drain it but not too much, and transfer it to the pan with the sauce.
- Over very low heat, mix well, and garnish with the lemon zest and oregano, but be careful not to overpower the main flavors.
- The pasta with anchovy fillets, apple, and pine nuts is ready; serve immediately, piping hot.
With this recipe we have experimented with the suggestion of Nobel Prize winner Giorgio Parisi for don't waste gas: we poured the pasta into the boiling water, waited for it to start boiling again, turned off the heat, covered the pot and tasted it one minute after the cooking time indicated on the package. pastaExtremely satisfying result.
