PASTA WITH ANCHOVIES RECIPE

RECIPE: PASTA WITH ANCHOVIES AND BREADCRUMBS

INGREDIENTS (For 10 people)
- 1 kg of pasta of your choice
- 80g of anchovies in oil
- 60 g of extra virgin olive oil
- 150 grams of breadcrumbs
- 6 cloves of garlic
Preparation
- Put the water on the stove without salting it and brown the peeled whole garlic cloves and the drained anchovy fillets in a pan with 30 g of oil.
- Add a few spoons of hot water to better dissolve the anchovies, stir.
- In another pan pour in the remaining oil, add the breadcrumbs and brown them.
- Cook the pasta, drain, place it in the pan with the anchovies and cook over the heat for a minute, adding a little cooking water if necessary.
- Turn off and add the breadcrumbs keeping some aside to decorate the dishes.
- According to your taste, add even a pinch of Chili pepper, rosemary, parsley and capers.
RECIPE: PASTA WITH ANCHOVIES AND PINE NUTS
And here now is the second variant with the herbs and pine nuts:
Ingredients
- 320 g of short pasta
- approximately 200g of herbs
- 1 heaped tablespoon of pine nuts
- 2 salted anchovies
- 1 clove of garlic
- 1 chilli
- 6 spoons of extra virgin olive oil

Preparation time: 20 minutes
Cooking time: the same cooking time as the pasta
Preparation
- Rinse carefully rinse the herbs under cold water, then cut them in strips.
- PREPARATIONS the water for the pasta by combining the salt and the chopped herbs, then place on the heat.
- Rinse e boned salted anchovies.
- In a large pan, paid the oil and place the anchovy fillets on it. Heat it and, meanwhile, using a wooden spoon, melt the anchovy. Add the crushed garlic clove and the Chili pepper, always mixing well to blend the flavors
- Completed with pine nuts and toast them. Be careful not to get distracted; they take a while to toast, but only a moment to burn!
- Meanwhile cook the pasta together with the herbs, drain it just al dente and sauté it for a few minutes in the pan with the seasoning.
- Delete thegarlic, prepare the portions and enjoy it.
This recipe doesn't like grated Parmesan cheese. Alternatively, you can toast a few tablespoons of bread crumbs, in a non-stick pan, being very careful not to burn it.
