ANISEED BREAD RECIPE –

INGREDIENTS (For 6 people)
- 350 g of wholemeal flour
- 90 ml of soy drink
- 50 ml of rice milk
- 3 tablespoons of refreshed sourdough starter
- 1 tablespoon of green anise
- A pinch of salt
- 4 tablespoons of olive oil
- 80 g of shelled walnuts
Preparation
- Combine the flour, sourdough starter, salt, chopped walnuts and anise in a bowl. Collect 80 ml of soy drink, the oil and the anise in a small jug. rice milk.
- Combine the two mixtures, stirring well until smooth. Let rise for 4 hours in a warm place. Shape the dough into a loaf and brush the surface with the remaining drink.
- Let it rest for another 30 minutes, then bake at 180°C (350°F) for about 40 minutes. Once cooked, let the bread cool on a wire rack and serve sliced.
An advice
Depending on your taste, add honey and orange zest to the dough, or alternatively, dried fruit. Serve the bread with local cured meats and cheeses.
