Pan focaccia: the recipe for a soft and tasty dough

FOCACCIA BREAD RECIPE

Kneading is relaxing, so why not give it a try? This focaccia bread, in addition to being easy to prepare, it lends itself to being kneaded and stuffed with a wide variety of ingredients: an excellent reason to use up leftover food in the pantry or refrigerator and not waste anything.

FILLED FOCACCIA PAN RECIPE

Let's see, step by step, how to prepare this delicious for successful corporate training which we learned to prepare during the “Bread” course organized by the “La Cucina italiana” School.

Ingredients

(for a baking pan approximately 22 – 24 cm in diameter)

  • 400 g of Manitoba flour
  • 100 00 grams of flour
  • 20 gr of fresh brewer's yeast
  • 10 g of extra virgin olive oil + a little for greasing
  • 10 gr of salt
  • 10 grams of sugar
  • A handful of mixed seeds
  • 1 glass of water
  • Smoked salt

Preparation

  • To melt the yeast and sugar in a portion of the indicated water.
  • Prepare Sift the flours into a bowl, add the dissolved yeast and oil, and begin kneading. Finally, add the salt. Add the remaining water a little at a time, continuing to knead until the dough becomes soft and firm.
  • To close Place the dough in a plastic bag, leaving room for it to rise (it will double in volume), and let it rest for at least an hour.
  • Take up again Place the risen dough on a pastry board and, simply with your hands, flatten it and roll it out to a thickness of about 1 cm, giving it a more or less rectangular shape.
  • Sprinkle the seeds on the surface.

  • Roll up the dough forming a well-closed cylinder.

  • Cut it into slices a couple of centimetres wide.
  • Grease the pan with a drizzle of oil, and to arrange for you the slices laid down, slightly spaced apart from each other.

  • To leave bump up for another 20 minutes or so.
  • To anoint the surface with a thin layer of oil, dust of smoked salt and place in a hot oven (200°) for about 20 minutes.
