CARROT MUFFIN RECIPE
I muffin carrots with orange juice are the perfect mix to face the day. These desserts they are in fact rich in vitamins, antioxidants, mineral salts and fibre.

CARROT MUFFINS
Here's how to prepare, step by step, many delicious muffins:
Ingredients
- 300g 00 flour (also 150g wholemeal flour and 150g 00 flour)
- 200 gr sugar
- 130 ml orange juice
- 130 ml sunflower seed oil
- 200 gr carrots grated
- The grated zest of an orange
- A pinch of cinnamon
- 1 packet of yeast
- 4 eggs

Preparation
- Grate the orange zest and whip it with the eggs and sugar in the mixer or with the whisks.
- Sift the flour, baking powder and cinnamonArrange them in a fountain shape and make a hole in the center.
- Pour the mixture of eggs and sugar, the orange juice, the oil and the grated carrots and mix until you obtain a smooth and homogeneous mixture.
- Pour into the muffin pan and bake at 180° for 15 minutes.
An advice:
To make the muffins even more greedy you can mount some soft cream (also in the vegetable version) with a splash of bitter cocoa.
