BLACK RICE SALAD WITH SALMON AND AVOCADO RECIPE

A dish that can also become unique, due to the richness and flavour of its ingredients: the black rice salmon andavocado It's a little delicacy that you can indulge in, with this simple recipe, at any time of year.

ingredients for 4 people

  • 280 g of black rice
  • 200 g of smoked salmon
  • 1 avocado
  • 1 tablespoon of chopped parsley
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste

Preparation

  • After cooking Steam black rice, pass it under running water to cool it.
  • Meanwhile, peel an avocado and after cutting it into cubes combine it with the smoked salmon cut into small pieces.
  • Before serving at the table, season everything with an emulsion made with 2 tablespoons of extra virgin olive oil, 1 of parsley chopped and a pinch of salt.
