How to prepare fennel and orange salad
The combination is perfect for its freshness, authenticity, and flavor: fennel salad with oranges is made with this simple and quick original Sicilian recipe. You can add other ingredients of your choice to the basic recipe: black olives “cunzate” (i.e. seasoned), red onions (possibly Tropea), radicchio, spinach.
Ingredients
(For 4 people)
- 2 fennel
- 2 oranges
- salt and pepper
- 2 tablespoons of olive oil
Preparation
- Wash and dry the fennel, keeping the outer part as well.
- Cut off the tips and then slice thinly.
- Peel an orange and separate the segments.
- In a bowl, combine the orange segments and thinly sliced fennel and then season with 2 tablespoons of extra virgin olive oil, salt and pepper.
- You can add black olives, walnuts, raw spinach, chicory, sliced onions, lettuce, capers and whatever ingredients your imagination suggests.
