How to prepare vegetable stock
A standard commercial stock cube can cost more than 2 euros (especially if it's advertised as "organic"...) and that doesn't mean it's truly as natural as it's advertised. On the contrary, if prepared at home, with a simple and quick recipe, it's certainly genuine, and it also allows you to recover and avoid wasting food. vegetable leftovers and vegetables.
Ingredients
- 2 kg of fresh and mixed vegetables and greens (carrots, onions, celery, potatoes, tomatoes, courgettes)
- Whenever you cook a vegetable, set aside the scraps, separated and cut into cubes, in small food containers.
- Once you have obtained a sufficiently large quantity to be able to create a few portions of stock cube, proceed with the preparation of the recipe.
- 800 g of coarse salt and various flavourings such as rosemary, sage, parsley, basil, bay leaves
- If you like exotic flavours, you can also add a pinch of curry or chili pepper
Preparation
- Wash the vegetables well without drying them (this will prevent them from sticking to the pan) and the herbs.
- Put everything in a pan together with the salt and cook over medium-low heat for an hour.
- Once cooked, cut the vegetables into small pieces and arrange them on a sheet of baking paper placed on a baking tray.
- Bake in the oven at a temperature of 60°-70° for at least 30-35 minutes.
- At the end of the drying process, chop everything.
- Store the powder in airtight glass jars.
Homemade vegetable stock lasts twenty days in the refrigerator and up to five months in the freezer.
