ALMOND CREAM RECIPE

To prepare the vegan almond cream you can use both blanched and peeled almondsThe choice is yours based on your tastes. The difference will then be in the color of the almond cream: the one made with blanched almonds is very white, the one made with unblanked almonds is darker.

Ingredients

  • 150 gr of almonds
  • 150 grams of sugar
  • 300 grams of water
  • 30 grams of corn starch
  • A pinch of cinnamon

Preparation

  • Finely chop the almonds until they become flour, blend the almonds with the water until you obtain a smooth mixture.
  • Add the starch, sugar and cinnamon and cook over low heat in a saucepan, stirring continuously.
  • Once the mixture reaches boiling point, cook for another 3 minutes and then remove from the heat and let cool.
  • Store in the refrigerator, in a glass jar. Consume the cream within a month.
