Baked Artichokes Gratinated Recipe
Artichokes are rich in important properties for healthHere's a very simple, very tasty recipe to prepare them in an original way. A fairly quick preparation, with the advantage that we can divide the work into several stages: boil the artichokes first, and then season and gratinate them.
Baked Artichokes Gratinated
Ingredients for 4 people
- 4 artichokes, including stems
- 4 anchovy fillets in oil
- Plenty of grated cheese (Parmesan or Grana Padano)
- 1 clove of garlic
- 1 knob of butter (optional)
- Olive oil
- The juice of half a lemon
Preparation
- Prepare a bowl of cold water in which you have squeezed the lemon juice.
- Clean the artichokes, cut off the thorns if there are any and outer leaves harder.
- Cut them into quarters and remove the inside hay, gradually dip them in water and lemon.
- Also clean the stems, if they are tender enough: remove the peel around them.
- Boil the artichokes and stems, steaming if possible, until al dente.
- Meanwhile, in a separate pan, place the anchovy fillets, the butter (or two tablespoons of oil) and the garlic clove.
- Melt the anchovies completely over low heat until they become creamy. Remove the garlic clove.
- Lightly grease an ovenproof pan and sprinkle the bottom generously with grated cheese.
- Place the artichokes and stems on top.
- Cover them with more grated cheese and the anchovy cream.
- Transfer to a hot oven to gratinate, until you see the cheese melted and golden.
- The baked artichokes au gratin are ready: serve them immediately.
- This preparation is also excellent with other vegetables, not only with artichokes.
