VEGAN BURGER RECIPE

Ingredients
(For 4 people)
- 2 potatoes
- The waste obtained from the centrifuge of 3 carrots
- The waste obtained from the centrifuge of 1 fennel
- 1 teaspoon coriander
- Extra virgin olive oil
- Breadcrumbs or chickpea flour
- Salt and pepper
Preparation
- Boil the potatoes in plenty of salted water and, once cooked, let them cool, peel them and then, with the prongs of a fork, mash them until they become a puree.
- Recover the juicer scraps you obtained from the carrots and fennel, mix them with the mashed potatoes, season with salt and pepper and add the coriander.
- Work the dough with your hands and create several burgers. Coat with breadcrumbs or chickpea flour.
- Heat the extra virgin olive oil in a pan and, once it is very hot, cook the burgers until golden brown.
