BEAN BURGER RECIPE

Ingredients
- 150 g of azuki or borlotti beans or cannellini beans
- 6 lettuce leaves
- 2 tablespoons ground flaxseed
- 2 tablespoons chopped parsley
- 1 small onion
- 1 piccola carota

- ½ teaspoon ground coriander

- Extra virgin olive oil
- Salt and pepper
Preparation
- Rinse the beans and soak them in plenty of cold water for at least 12 hours; then rinse and drain them.
- To put the beans in a saucepan, cover with 2 liters of cold water and bring to the boil.
- Cook Cook for about 90 minutes, adding salt toward the end. Drain and place in a bowl.
- Chop Coarsely puree the beans using an immersion blender. Place the ground flax in a small bowl with 3 tablespoons of water and stir; let thicken for 5 minutes. This preparation can be replaced with an egg.

- Mix Carefully press the mixture with a fork and form the burgers. If the mixture is too soft, add more breadcrumbs until it reaches the right consistency.
- Warm up a spoonful of oil in a non-stick pan and cook the burgers.
- To serve with sauces according to taste.
