LENTIL BURGER RECIPE

Ingredients

  • 500g of boiled lentils
  • 1 and 1/2 white onion
  • 2 carrots
  • 10 sprigs of fresh parsley
  • About 3 tablespoons of yellow corn flour
  • Sale
  • 1/2 teaspoon of curry
  • 6 tablespoons of extra virgin olive oil

FOR THE SAUCE

  • 200g of low-fat yogurt
  • 1 saffron
  • 1/2 chopped onion

Preparation

  • Wash the lentils and, after draining them very well, place them in a blender together with the onion, the carrots, parsley, corn flour, curry, 5 teaspoons of oil and a little salt.
  • Blend until you obtain a thick, smooth mixture and adjust the salt to your taste but trying not to overdo it with the use and if necessary, add a little more curry.
  • Prepare the different burgers by giving them the classic round shape: you can use pastry cutters, simple steel rings that can hold the mixture in place, or alternatively a cup.
  • Once ready, place them in a large non-stick pan and cook for about 10 minutes: if you cover the pan with a lid, you will not only halve the cooking time but also reduce the gas consumption.
  • Once the right golden colour is reached, turn off the heat and start preparing the sauce: in a bowl combine the low-fat yogurt, the sachet of saffron and the onion, mix well with a whisk and place everything in the refrigerator.
  • All that's left to do is serve your tasty lentil burgers with this delicious yogurt and saffron sauce.
