Ingredients

(For 4 people)

  • 2 potatoes
  • The scraps obtained from the juicer of 3 carrots (alternatively broccoli scraps)
  •  The waste obtained from the centrifuge of 1 fennel
  •  1 teaspoon coriander
  •  Extra virgin olive oil
  • Breadcrumbs or chickpea flour
  • Salt and pepper

Preparation

  • Boil the potatoes in plenty of salted water. Once cooked, wait for them to cool before peeling them, then mash them with a fork until you obtain a lump-free puree.
  • Recovered the waste from the centrifuge that you will have obtained from the carrots and fennel, mix them with the mashed potatoesAdd salt, pepper, and coriander. Then, work the mixture with your hands, compacting it and forming burgers. Coat each burger with breadcrumbs or chickpea flour.
  • Heat Heat some extra virgin olive oil in a pan and, when it is very hot, cook the burgers until golden brown.
