A healthy and light breakfast, a wholesome and low-cost snack, a quick and easy way to bring rustic biscuits to the table to accompany tea or freshly squeezed orange juice. Ideal for the whole family, they contain no sugar or butter and are made with whole wheat flour. You can customize the recipe by adding cereals or granola.

Ingredients

  • 250 g of wholemeal flour
  • 50 ml of sunflower seed oil
  • 80g of skimmed milk
  • 50ml of honey
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon of yeast
  • Orange and lemon zest to taste

Preparation

  • Wash and dry the citrus fruits and grate some of the zest. The amount depends on your personal taste; we used half a small orange and a quarter of a lemon.
  • In a large bowl, sift the flour and baking powder and make a well in the center in which to add the egg, oil, milk, honey, and cinnamon.
  • Knead until the mixture is smooth, homogeneous, and workable, then add the orange and lemon zest.
  • If the dough is too soft, we can add more flour; if, on the contrary, it is too hard, we can add milk.
  • Form a ball, wrap it in a cloth and put it in the fridge for about 30 minutes.
  • Turn on the oven and preheat to 160°.
  • After this time, roll out the dough with a rolling pin and cut out the biscuits with a cookie cutter of the desired shape.
  • Line a baking tray with baking paper and bake at 160°C for 20 minutes, turning them over after the first 10 minutes.
  • Let it cool and store in a tin or airtight container.
