  • 150 g of sweet almonds
  • 50 g of bitter almonds
  • 260 grams of sugar
  • 90 g of egg white

Preparation

  • Peel the almonds and then chop them together with the sugar Using a stand mixer, add the egg whites and mix well to avoid lumps.
  • Line a baking sheet with parchment paper, place the mixture in a pastry bag, and pipe out several walnuts, spaced apart. Press them down lightly.
  • Let it rest for an hour and then bake in the oven at 170 degrees for about 20-25 minutes.

CINNAMON AMARETTI RECIPE

Another recipe also calls for the addition of cornstarch , grated lemon zest , and ground cinnamon . These amaretti can be stored for a few days in an airtight container in a cool place.

Ingredients for 40 amaretti biscuits

  • 1 teaspoon of flour
  • 1 teaspoon of cornstarch
  • 1 teaspoon of ground cinnamon
  • 90 g of granulated sugar
  • 1 teaspoon grated lemon (or orange) zest
  • 120 g ground almonds
  • 2 whites
  • 30 g of icing sugar

Preparation

  • Preheat oven to 180°C. Line two 32 x 28 cm baking sheets with parchment paper.
  • In a bowl mix flour, cornstarch, cinnamon, half sugar, lemon zest and almonds.
  • Using an electric whisk, whip to snow them whites In a bowl, gradually add the remaining sugar, beating constantly until the mixture is thick and glossy. Using a spoon, fold it into the remaining sugar. Mix until you obtain a soft dough.
