Stuffed anchovies: the baked recipe

With spinach, breadcrumbs, and two cloves of garlic. And a touch of chopped parsley.

STUFFED ANCHOVIES RECIPE

A simple dish, once considered "poor" (fresh anchovies are now expensive), with an extraordinary flavor. Stuffed anchovies are prepared according to this traditional recipe.

Ingredients

  • anchovies 700 g
  • spinach 500 g
  •  40 g breadcrumbs
  • extra virgin olive oil 40 g
  • two cloves of garlic
  • parsley
  •  salt and pepper

Preparation

  • Wash the anchovies and open them in half, leaving them whole on the back, remove the heads and the central bones but leave the tails.
  •  Wash the spinach in plenty of water.
  •  Put Add the spinach, without draining it, to a pot and cook for 3 minutes without adding water. Drain, squeeze dry, and chop coarsely.
  •  Put In a saucepan, combine the oil, garlic, and salt, cover, and cook over very low heat for a couple of minutes.
  •  United Add the spinach, a pinch of pepper, and cook for a few minutes. Remove the garlic, season with salt, and let cool, after mixing well to flavor the spinach.
  •  Put a spoonful of spinach on top of each anchovy.
  •  Rolled up the anchovies and place them, tightly packed together, in a buttered baking dish on a layer of the remaining spinach.
  • Sprinkle with breadcrumbs and chopped parsley.
  •  Cook Bake in a preheated oven at 200 degrees for 10-15 minutes. Serve hot or warm.
