Rice salad with confit cherry tomatoes: the recipe with chopped pistachios

How to make rice salad with cherry tomatoes and chopped pistachios

An alternative to the usual rice salad: the unmistakable aroma of basmati rice is enriched by the sweetness of tomato.

Ingredients for 4 people)

  • 250 grams of basmati rice
  • 250 grams of very ripe cherry tomatoes
  • 1 clove of garlic
  • Extra virgin olive oil
  • 1 tablespoon of granulated sugar
  • 3 heaped tablespoons of chopped pistachios
  • Salt and pepper
  • Fresh oregano or basil

Preparation

  • Boil the rice in plenty of salted water, drain it al dente and cool it down immediately under cold running water, to stop the cooking.
  • Fate school the rice well, so as to eliminate all the water.
  • Meanwhile, wash the cherry tomatoes thoroughly, cut them in half, and place them in a pan with three or four tablespoons of good extra virgin olive oil and the crushed garlic clove.
  • Place them on the heat; when they start to heat up, add salt and cover the pan. cook over moderate heat, stirring often, until the tomatoes begin to fall apart.
  • Typically the liquid present is sufficient to maintain a creamy consistency, but if necessary, help yourself with a little water and be careful not to burn them.
  • At the end of cooking, eliminate the garlic, season with salt and pepper if necessary, and dissolve a spoonful of sugar to caramelize slightly.
  • As you like, perfume with fresh oregano or basil.
  • Take the well-drained rice and transfer it to a container to bring to the table. season it with cherry tomato sauce and chopped pistachios.
  • Finish with a few drizzles of extra virgin olive oil and mix well: the dish is ready.

This basmati rice salad with confit cherry tomatoes is gluten-free, lactose-free, and suitable for vegans and vegetarians. You can also use a different type of rice besides basmati.
