RECIPES WITH LEFTOVERS

Ingredients
- 4 eggs
- 4 slices of stale bread
- 2 leeks
- 50 g butter
- 600 ml of water
- 1 1/2 teaspoons salt
- pepper to taste
Preparation
- Clean the leeks and cut them into thin slices.
- Melt the butter In a large skillet or pot, add the leeks to brown them, then the water. Season with salt and bring to the boil.
- When the water is boilingCrack the eggs and then add them, one at a time, to the water: be careful not to break them. Cook them as if they were poached, in the water with the leek, for at least 5 minutes.
- Arrange the bread slices on the plates Then pour the water and leek over them to soften them, and finally add an egg to each slice. Add pepper to taste and serve.
