RADISH SALAD WITH BEETS AND ORANGES RECIPE

Let's see, step by step, how to prepare a delicious radish salad with beets and oranges topped with a tasty lemon dressing, using the recipe from Insalate + by Amber Locke (Publisher Gribaudo) , which features lots of original ideas for creating spectacular, nutritious, and healthy salads.

Ingredients

  • 3 blood oranges
  • 2 raw red beets, scraped or peeled
  • 2 yellow beets, scraped or peeled
  • 5-6 peeled radishes
  • 1 fennel
  • ½ peeled onion
  • A handful of edible flowers or herbs

INGREDIENTS FOR LEMON SAUCE

  • The finely grated zest and juice of a lemon
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper

Preparation

  • Peel the oranges and cut them into segments, also slice the beetroots, radishes, onion and the fennel and then place all the vegetables in a salad bowl with the orange segments.
  • Meanwhile, prepare the lemon sauce: pour the grated lemon zest and juice, oil, salt, and pepper into a bowl. Depending on your taste, you can also add a little more... Orange juice.
  • Pour the dressing over the salad and toss well. Garnish with edible flowers or herbs and serve. Add chickpeas, if desired.
