Ingredients
- 3 blood oranges
- 2 raw red beets, scraped or peeled
- 2 yellow beets, scraped or peeled
- 5-6 peeled radishes
- 1 fennel
- ½ peeled onion
- A handful of edible flowers or herbs
INGREDIENTS FOR LEMON SAUCE
- The finely grated zest and juice of a lemon
- 2 tablespoons of extra virgin olive oil
- Salt and pepper
Preparation
- Peel the oranges and cut them into segments, also slice the beetroots, radishes, onion and the fennel and then place all the vegetables in a salad bowl with the orange segments.
- Meanwhile, prepare the lemon sauce: pour the grated lemon zest and juice, oil, salt, and pepper into a bowl. Depending on your taste, you can also add a little more... Orange juice.
- Pour the dressing over the salad and toss well. Garnish with edible flowers or herbs and serve. Add chickpeas, if desired.
