Butterless Chocolate Quinoa Cake

Ingredients
- 220g of quinoa
- 80 grams of dark chocolate
- 120 g of raw sugar
- 20 grams of cocoa powder
- 3 eggs
- 200 g cheese
- 1 packet of yeast
Method
- Boil the quinoa for 10 minutes in 500 ml of unsalted water. Once cooked, turn off the heat and let it rest for another 10 minutes.
- Turn the oven on to 180° so that it is at temperature when the process is finished
- In a small saucepan, melt the chocolate in a bain-marie with the sugar.
- When it is ready, combine the quinoa and chocolate in a large bowl, add the eggs, ricotta and bitter cocoa and mix the ingredients until you obtain a smooth and homogeneous mixture.
- Add the yeast and line a 24cm springform pan with baking paper soaked in water and squeezed out.
- Pour the mixture into the cake pan and bake for about 30 minutes
- Before taking the cake out, test with a toothpick and if it doesn't come out dry, continue cooking for another five minutes.
- Once ready, let them cool, remove the springform pan and sprinkle with icing sugar.
