QUINOA SOUP WITH VEGETABLES –

Today, in particular, we will see how to prepare a delicious and healthy soup of quinoa: a simple, healthy and tasty dish thanks to the presence of zucchini and peas. Here is the recipe:

Ingredients

  • 150g of quinoa
  • 120 grams of peas
  • 3-4 courgettes
  • 1 of celery
  • 1 onion
  • Extra virgin olive oil (as needed)
  • Salt and pepper (to taste)

Preparation

- Combine in a saucepan the onion cut the onion into thin slices and the celery into cubes, add a drizzle of oil and then sauté the vegetables over low heat for a few minutes;

- Add the chopped courgettes and peas and cover with a liter of cold water. Bring to a boil and continue cooking for another 15 minutes;

- Wash it well Quinoa Then place it in a pot with plenty of lightly salted water. Bring to a boil and then simmer for about 15 minutes over medium heat. After this time, drain the quinoa and add it to the vegetables.

- Mix well, adding a pinch of salt and pepper to taste.
