POTATO NESTS RECIPE –

To bring to the table a tasty side dish, quick to make and original, we propose the recipe for the nests of potatoes It can be prepared either in the oven or in a pan. It's ideal for the Christmas holidays, both as a delicious appetizer and as an elegant and complete side dish, stuffed with mushrooms or vegetables, and perfect for using up small leftovers in the fridge. STUFFED POTATO NESTS –

To make this recipe, we can recycle vegetables and cheeses from the fridge or use leftover mashed potatoes with taste and imagination.

  • Dose: for 8 potato nests

  • Cooking time: 15 minutes in the oven

INGREDIENTS

  • 500 gr potatoes
  • 1 egg
  • 50g grated Parmesan cheese
  • A knob of butter
  • Salt and Pepper To Taste
  • 300g of vegetables of your choice (spinach, radicchio, etc.)
  • 100g of cheese

PREPARATION

  • We wash and dry the potatoes, boil them in plenty of salted water, once they have cooled down remove the peel and mash them with a potato masher
  • In a large bowl, place the potatoes, egg, parmesan, salt, pepper and a knob of butter, mix all the ingredients well and then put the resulting mixture in a piping bag with the widest nozzle.
  • We wash and boil the vegetables we intend to use and let them cool.
  • Using a mixer or food processor, roughly chop the vegetables together with the cheeses; they will be used as filling for our nests.
  • Take the baking tray and cover it with baking paper.
  • Using a pastry bag, we create a basic circle with a diameter of 8/10 centimetres and then we form a cord around the circle, leaving a hole in the centre where we will insert the filling.
  • Bake the nests for about 15 minutes at 180° until they become slightly crispy and then add the filling.
  • Now let's move on to grilling: we insert the filling into the nests and then bake for another 5 minutes allowing the cheeses to melt.
  • We bring them to the table piping hot
