PEAR RISOTTO RECIPE

Ingredients

  • 300 g of rice
  • 2 pears
  • 50 gr of walnuts
  • 100 ml of white wine
  • Vegetable broth
  • 4 tablespoons grated Parmesan cheese
  • 20 g butter
  • 2 tablespoons of extra virgin olive oil
  • Pepe

Preparation

- Peel and slice the shallots, sauté them over low heat in a pan with a drizzle of oil and 2 tablespoons of water.

- In another pan, toast the rice for a few seconds and then add the shallots and the white wine. Let it evaporate and then add a couple of ladles of hot brothStir and cook for at least 10 minutes, adding the hot broth from time to time until the rice is almost cooked.

- Also add the diced pears and walnuts. Stir the risotto with the butter and the parmesan cheese and add a pinch of pepper.
