SUMMER PASTA RECIPES
Pasta is really hard to give up. Even in the summer months, when the risks of gain a few pounds are increasing exponentially. It is therefore essential to choose the right recipe, one that combines taste with health. And that has as its seasoning base the seasonal vegetables, as in the case of this one menu based on reginette which can also become a single dish

REGINETTE RECIPE: ZUCCHINI, AUBERGINES AND ALMONDS
Here recipe:
Ingredients for 4 people)
- Reginette-type pasta: 350 grams
- Two small courgettes with the flower
- A small eggplant
- An egg yolk
- Half a red onion
- A clove of garlic
- Two tablespoons of Parmesan cheese
- A spoonful of flaked almonds
- Parsley, salt and pepper to taste
- Four tablespoons of extra virgin olive oil
Preparation
Cook pasta in salt water;
Chop onion and garlic and brown them with three tablespoons of oil and two of water in a large pan;
United the courgettes cut into slices and stew them for 2-3 minutes, add the eggplants diced and well cleaned flowers, salt and pepper;
Bake for another 8-10 minutes so that the courgettes remain nice and crunchy;
Drain the pasta, preserved a minimum of cooking water, pour it in the pan with the sauce e skip it for a minute;
United the egg yolk, mixed with the parmesan and with a few spoons of pasta water, and mix well with a wooden spoon. It should be a sort of cream;
Served at the table with a sprinkling of chopped parsley and almonds in flakes.
