How to make baked stuffed potatoes

Baked stuffed potatoes are a quick and easy dish to prepare, with a great advantage: the opportunity to reuse leftover vegetables and cheeses instead of wasting them.

Ingredients (for 4 people)

  • 4 medium sized potatoes
  • 100g of cheese (stringy cheese)
  • 100g of vegetables (spinach, carrots, cauliflower)
  • 50g of cold cuts (to taste)
  • 50 grams of parmesan cheese
  • Salt and Pepper To Taste
  • Spices (oregano, rosemary)
  • Extra virgin olive oil

Preparation

  1. Wash and peel the potatoes, dry them well and place them on a work surface.
  2. Blanch the potatoes for five minutes in a pot of boiling water: this process serves to make them more malleable for cooking.
  3. Let it cool, then with a sharp knife make some cuts along the entire long side of the potato where you will insert the dressing. Add salt and pepper.
  4. Line a baking tray with baking paper and place the potatoes on it, add a drizzle of extra virgin olive oil and bake in the oven for 10 minutes at 180°.
  5. Meanwhile, prepare the filling by cutting the vegetables into slices and cheese.
  6. Remove the pan from the oven and insert the vegetable, cheese, and cured meat slices into the cuts made in the potatoes.
  7. Cook again in the oven for another 10 minutes and then turn on the grill and add the parmesan and the spices,The potatoes will be cooked when a golden crust forms on the surface.
