NETTLE POTATO CREAM RECIPE

Ingredients

(for 4-6 people)

  • 1 nice bunch of fresh, tender nettles (prefer the apical leaves)
  • 125 ml. fresh cream (1 pack)
  • 2 eggs
  • 2 tablespoons grated Parmesan
  • Salt and pepper
  • 400 grams of potatoes
  • 1 glass of milk
  • Extra virgin olive oil
  • Lavender-flavored salt or smoked salt

Preparation

  • Transfer the mixture in a jug or container with a spout, so that it can easily fill a soufflé mold or (as I did) individual molds. Cook in the oven at 160° for about 20 – 25 minutes.
