NETTLE PIE RECIPE

NETTLE POTATO CREAM RECIPE
Ingredients
(for 4-6 people)
- 1 nice bunch of fresh, tender nettles (prefer the apical leaves)
- 125 ml. fresh cream (1 pack)
- 2 eggs
- 2 tablespoons grated Parmesan
- Salt and pepper
- 400 grams of potatoes
- 1 glass of milk
- Extra virgin olive oil
- Lavender-flavored salt or smoked salt
Preparation time: 30 minutes
Cooking time: 40 minutes
Preparation
- lavare Carefully clean the nettles, removing the stems and any damaged leaves. Place them in a pan with a little water and boil them few minutes. Drain them, leaving them a little moist, make them cool down for about ten minutes, then blend them with the eggs, cream, Parmesan, salt and pepper.
- Transfer the mixture in a jug or container with a spout, so that it can easily fill a soufflé mold or (as I did) individual molds. Cook in the oven at 160° for about 20 – 25 minutes.
- Meanwhile boil le potatoes, better if with the peel, in salted water; once ready, drain them, peel them, crush them Using a potato masher, combine the potatoes with the milk. Season with salt.

You can have fun playing with colors: you can choose pink or purple potatoes, or white potatoes colored yellow with a teaspoon of turmeric dissolved in milk.
