- 500 g of tomato pulp
- 200 ml of vegetable stock
- 1 onion

- Wash them well mushrooms and cut them into slices. Chop the onion very finely.
- Pour a spoonful of oil into a pan and brown the onion until golden.
- Add a ladle of vegetable broth, a little salt and pepper and then cook for about 5 minutes.
- After this time, add the mushrooms, mix well so that the various ingredients are combined, season with salt, add a little more vegetable broth and then cook for another 5 minutes.
- At this point, add the tomato sauce and cook over low heat for about 15 minutes. Serve with pasta.
DRIED MUSHROOMS SAUCE
The recipe for dried porcini mushroom sauce requires the same ingredients and the same preparation method as the sauce with fresh mushrooms, with one difference: you need to rehydrate them before using them.
Preparation
Place the dried mushrooms in a bowl of warm water for about 15-20 minutes, until very soft. After this time, squeeze them well to remove any excess water and then use them in various recipes.

- 200g of Champignon mushrooms
- 3 tablespoons flour
- 250 ml of milk
- 250 ml of water
- 25 g butter
- 1 tablespoon of fresh cream
- Salt (to taste)
Preparation
- Clean and slice the mushrooms, then add them to a pan with the butter. Season with salt and cook for about 5 minutes.
- Pour the mixture into a bowl flour, also add the milk and water, blend everything with the hand blender so as not to form lumps and then pour the resulting cream over the mushrooms.
- Light the heat and bring to the boil, stirring constantly.
- Cover the pot with a lid, reduce the heat to low and cook for another 25-30 minutes.
- After this time, blend all the ingredients and add the cream.
