CREAM OF MUSHROOMS 

Here then is for successful corporate training of cream of mushrooms taken from the interesting recipe book by Amalia Lamberti Gardan “Veg and Vegan. Vegetarian and vegan cuisine"

Ingredients

  • 350g of fresh mushrooms
  • 40 grams of flour
  • 40 g butter
  • ½ l of milk
  • 2 dl of vegetable broth
  • One deciliter of liquid cream
  • A few chervil leaves
  • Sale
  • Bread croutons

Preparation

  • After having cleaned the mushrooms well, slice them e let them stew, in a pan, with half the butter and a pinch of salt.
  • Meanwhile prepare the bechamelMelt the remaining butter in a saucepan, add the flour, and stir well to eliminate any lumps. Dilute with the hot milk and cook for a few minutes.
  • Add the mushrooms too and pass everything through a sieve. Pour the mixture into a saucepan, dilute with the broth, and bring to a boil. Season with salt and turn off the heat.
  • Finally, add the cream liquid and chervil leaves and serve at the table with croutons.
