MUSHROOM AND POTATO SOUP RECIPE

This first course is quick to prepare and a true delicacy when served with croutons. And it's up to you whether you want to enrich the dish with... cream or soy sauce.

Ingredients
- 400g of porcini mushrooms, champignons or mixed mushrooms
- 2 potatoes
- A liter of vegetable broth
- 3 tablespoons of extra virgin olive oil
- 2 shallots
- Parsley
- Salt and pepper
Preparation
- Wash the mushrooms thoroughly and chop them into small pieces. Peel and wash the potatoes, finely slice the shallots, and then sauté them in a pan with a drizzle of oil.
- After a few minutes, add the mushrooms, season with salt and pepper and then add the broth hot and the potatoes cut into thin slices.
- Simmer the soup for about half an hour, then season with salt and garnish with parsley. Serve the soup piping hot with croutons.
