Ingredients

  • 400g of porcini mushrooms, champignons or mixed mushrooms
  • 2 potatoes
  • A liter of vegetable broth
  • 3 tablespoons of extra virgin olive oil
  • 2 shallots
  • Parsley
  • Salt and pepper

Preparation

  • Wash the mushrooms thoroughly and chop them into small pieces. Peel and wash the potatoes, finely slice the shallots, and then sauté them in a pan with a drizzle of oil.
  • After a few minutes, add the mushrooms, season with salt and pepper and then add the broth hot and the potatoes cut into thin slices.
  • Simmer the soup for about half an hour, then season with salt and garnish with parsley. Serve the soup piping hot with croutons.
