Ingredients

  • 1 kg of mandarins
  • 650 grams of sugar
  • 1/2 liter of water

Preparation

  • Pour the water into a saucepan and after peeling the mandarins, cook them together with the peels (choose only organic mandarins).
  • As soon as the mandarins start to become soft, generally after about a quarter of an hour of cooking, drain them and set them aside.
  • Bring the cooking water to the boil with the sugar for about 10 minutes.
  • Remove the membranes and filaments from the mandarins so as to use only the pulp, pass half of the mandarins through a food mill. peelings, also add the pulp, blend everything and add the mixture obtained to the syrup made from the cooking water combined with the sugar.
  • Bring everything to the boil until the jam reaches the desired consistency and then put it in the jars.
