CHEESECAKE RECIPE WITH BLUEBERRY COULIS

Here's what you need to make this delicious and colorful dessert: blueberries will give the cheesecake a natural purple hue. Furthermore, the absence of cream, eggs , and full-fat cheeses makes it lighter than the traditional version.

For the cake base, use crushed biscuits, the kind usually left over from the bottom of tins. For the yogurt and ricotta , prepare them following our recipes.

INGREDIENTS (for the cheesecake)

For the base

  • 150 g of dry or crumbled biscuits
  • 70 g butter
  • 1 teaspoon milk (if needed)

For the filling:

  • 200 g cheese
  • 400g of creamy plain yogurt (you can use berry yogurt if you prefer)
  • 16 g of gelatine
  • 20 gr of milk
  • 80 grams of sugar
  • 50g of blended blueberries
  • 15 whole blueberries

For the coulis:

  • 80 g of blueberries
  • 20 grams of sugar

Preparation

  • Start the preparation by making the base: chop the cookies dry biscuits and melt the butter. Mix the butter with the biscuits.
  • Pour the mixture obtained on a springform pan with a diameter of 22/24 cm, compact everything and store in the refrigerator.
  • Meanwhile, proceed with the fillingPlace the gelatine in a glass of water for about 10 minutes: after this time, heat the milk and then pour in the gelatine.
  • Blend the blueberries Place them in a bowl with the ricotta, yogurt, and sugar. Mix the ingredients well, then add the milk and gelatin.
  • United also the 15 whole blueberries.
  • Recover the base Stored in the refrigerator, pour in the mixture. Level and refrigerate again. Proceed with the coulis preparation.
  • Pour, in a pot, the blueberries with the sugar and let it form a thick cream.
