Ingredients
(For 4 people)
- 200g of pasta
- 350g of lentils
- 100 g of tomato pulp
- 60 gr of grated pecorino
- A clove of garlic
- An onion
- A stick of celery
- A handful of parsley
- Oil (as needed)
- Salt (to taste)
Preparation
- After soaking the lentils in water, or alternatively choose a variety that doesn't require soaking, drain them and place them in a saucepan with plenty of water to cook.
- Also add a few slices of onion and ½ stick of celery, season with salt to taste and cook.
- Chop the remaining onion and celery, place them in a pan with a little oil, add the chopped parsley and sauté.
- Add the chopped tomato pulp and cook for about ten minutes.
- Pour the lentils and their cooking liquid into the pot, bring to a boil (add more boiling water if necessary) and cook the pasta.
- Once cooked, remove the soup from the heat and sprinkle with grated pecorino cheese.
