Ingredients

(For 4 people)

  • 200g of pasta
  • 350g of lentils
  • 100 g of tomato pulp
  • 60 gr of grated pecorino
  • A clove of garlic
  • An onion
  • A stick of celery
  • A handful of parsley
  • Oil (as needed)
  • Salt (to taste)

Preparation

  • After soaking the lentils in water, or alternatively choose a variety that doesn't require soaking, drain them and place them in a saucepan with plenty of water to cook.
  • Also add a few slices of onion and ½ stick of celery, season with salt to taste and cook.
  • Chop the remaining onion and celery, place them in a pan with a little oil, add the chopped parsley and sauté.
  • Add the chopped tomato pulp and cook for about ten minutes.
  • Pour the lentils and their cooking liquid into the pot, bring to a boil (add more boiling water if necessary) and cook the pasta.
  • Once cooked, remove the soup from the heat and sprinkle with grated pecorino cheese.
