RISOTTO RECIPE WITH PRAWNS AND LEMON

RISOTTO WITH PRAWNS AND LEMON
INGREDIENTS (For 4 people)
- 300g of good risotto rice
- 12 – 15 prawns
- 1 untreated lemon (zest only)
- 1 shallot
- 1 bay leaf
- 5 spoons of extra virgin olive oil
- 1 glass of brut sparkling wine
- A few grains of pepper

Preparation
- Shell i shrimp, collect the heads and shells, place them in a pan covered with plenty of water, add the bay leaf, two or three peppercorns, a little salt, and cook covered, over low heat, for about 20 minutes.
- Filtration the broth, crushing the fish and the herbs in the strainer with the back of a spoon, so as to to extract it all juices are good
- Chop the shallot together with the lemon zest, which must have been well washed
- Warm up the oil in a terracotta or aluminum pan, lightly fry the chopped vegetables, then add the shelled prawns and mix.
- To pour the rice, toast it and season it
- Wet with the sparkling wine, let it evaporate
- Bring to the boil Make the risotto using the fish stock. If it's not enough, add more hot water.
- Almost cooked, to taste to adjust the salt.
- Serve warm, not piping hot: the good quality of the rice ensures it holds its shape during cooking.
Our recommendations
- Lemon zest can be preserved by drying (in the sun, in a dehydrator, or in the oven) or by freezing. The former preserves its aroma longer, but requires a little more effort in preparation.
- If you have a large amount of fish stock, it will keep in the freezer for about a month. We recommend making small portions.
- The choice of shrimp deserves attention: if you can't find fresh shrimp from our seas, favor Argentine or Brazilian shrimp, which have a better flavor and are caught using less invasive methods.
- As an alternative to risotto, use pens: the result will be equally special.
