SWEET ICE CREAM WAFFLES RECIPE

Here then The recipe for homemade vegan ice cream wafers: a preparation taken from “Vegan ice creams and sorbets”, the recipe book by Alice Savorelli (Terra Nuova Edizioni).

PREPARATION TIME: 25 minutes

Ingredients

  • 25 ml of extra virgin olive oil
  • 1 tablespoon of vegetable butter without palm oil
  • 50 g of light brown sugar
  • Vanilla powder
  • 1 teaspoon cocoa powder (to taste)
  • A pinch of cinnamon powder (according to your taste)
  • 200 ml of vegetable milk
  • 120g of semi-wholemeal or kamut flour
  • 2 tablespoons of corn starch
  • 1 teaspoon flaxseed powder

  • Waffle maker oil

Preparation

- Mix the oil and the vegetable butter, add the sugar, a pinch of salt, the vanilla, the vegetable milk, the starch, the flax seeds dissolved in two tablespoons of water, the cocoa and the cinnamonAdd the flour and mix until you obtain a smooth mixture without lumps.

- Heat the waffle maker after greasing it with a few drops of oil. Pour the batter in with a spoon and create a small disk. Close the waffle maker and wait a few seconds before opening it again.

- Remove the wafer as soon as it reaches the desired golden brown color and shape it into a cone or basket. Alternatively, leave it flat.

- Let the wafers cool before filling them with ice cream.
