“Hostaria Koinè,” the first restaurant in Italy to open in a reception center

A multi-ethnic restaurant that embraces the wounds of wars around the world, and also the first in Italy to open in a reception center. The Arcinazzo plateau , a plateau of rare beauty straddling the provinces of Rome and Frosinone, is well known among tourists who frequent it, partly because it's known as "the Italian Switzerland." And right here, inside the "Traiano Imperatore" reception center (the name of the old hotel it replaced), the refugees staying there have opened the Koinè Hostaria restaurant.

The restaurant is open to the public but also serves as a training and job placement center for migrants and political refugees fleeing war in their countries, such as Ukrainians and Bangladeshis. The cuisine, typically multiethnic, is born from a blend of Italian gastronomic traditions and recipes from various countries, with the goal of fostering inclusion and independence through employment.

The project was conceived by the reception center's managers, and the kitchen is coordinated by chef Alessandro Marsili, along with cooks who live or have lived at the Center, which hosts an average of no fewer than a hundred people . According to the promoters, the restaurant aims to demonstrate how hospitality can transform into an opportunity for growth for the local area, as well as for the people involved.
