HOMEMADE GRANULAR STOCK CUPS RECIPE

Granular cubes without dryer
In this recipe we will only use the waste parts of some vegetables that we usually use in cooking: onion, celery, carrots and salt.
INGREDIENTS:
- 150 g of carrot peels
- 150g of celery leaves and stalks
- 150 g of outer part and roots of onion (or shallot)
- 150 g of coarse salt
PREPARATION:
- Take the peels with carrots, the celery leaves and stalks, the outer parts and roots of the onion and place them in a saucepan with salt, without water or oil (this helps the natural dehydration process).
- After about 10 minutes on low heat you will see that the vegetables will have released the water: let it absorb.
- Reduce everything to pulp with the help of an immersion blender.
USEFUL TIPS:
You can let them dry vegetables in the sun for one day whole. Or put them in the Microwave for 10 minutes at minimum power or, finally, let them wilt again in the forno at home for 5 hours at 70°. This way the vegetables will be completely dehydrated and you will be able to keep them in glass jars.

Once ready the stock cube can be used for flavor any type of dish. If you want to prepare a broth for the tortellini it's enough a spoon full for every liter of water.
