Ingredients
- 1,5 kg of green tomatoes
- 450 grams of sugar
- The juice and zest of one and a half lemons
Preparation
- Wash the tomatoes, dry them, remove the stems, and then cut them into small pieces. Place the tomatoes in a saucepan, add the sugar, the lemon zest and juice and leave to macerate for at least 10 hours.
- After this time, cook over medium heat for about an hour, stirring occasionally and removing the foam that is created with a skimmer.
- Once cooked, blend the mixture, leaving some tomato pieces or reducing it to a puree depending on the consistency you want the jam to have.
- Pour the jam into sterilized glass jars, close them hermetically and leave to cool, remembering to turn the jars upside down.
